- 2 lbs. cooked/sliced potatoes
- 1/2 cup diced celery
- 2 tbs. diced onion
- 2 hard boiled eggs, diced
- 3/4 cup Hendrickson’s
- 3 slices bacon, diced
- 1 tbs. corn starch
- 1/4 cup water
- Salt & Pepper to taste
- Pimentos (as desired)
- Parsley (as desired)
Dice bacon and fry until crisp. Remove bacon and set on paper towel. Keep about 1 tbs. of bacon grease in pan.
Add Hendrickson’s and heat to a boil. Add in corn starch and water to bring to the consistency of a thin gravy.
Add bacon, celery, onions and eggs to potatoes in a separate dish and pour sauce over all.
Garnish with parsley and pimentos and serve.
