Ingredients:
- 1 pint cherry tomatoes, sliced in half
- 1 (15oz) can black beans (drained)
- 1 (15oz) can black eyed peas (drained)
- 1 (15oz) can yellow & white corn (drained)
- 1 green bell pepper, chopped
- 1/4 small red onion, chopped
- 1/4 small white onion, chopped
- 3 green onions, chopped
- 2 jalapeno peppers, chopped (1 if you like less heat)
- 1/2 c. Hendrickson’s Original Sweet Vinegar and Olive Oil Dressing
- 1 TBS minced garlic
- Fresh cilantro to taste
Directions:
In a large bowl, combine all ingredients except cilantro. Cover and refrigerate at least 2 hours. Toss with cilantro before serving. Serve with tortilla chips, corn chips, or bread.
